Freezing bread doesn’t just stop mold growth—it actually alters the physical structure of the starches inside the loaf. When bread is baked, heat forces starches to absorb water and soften. As it cools, those starches begin to re-crystallize, a process known as retrogradation.

Freezing locks moisture in place and slows down retrogradation. When you freeze and subsequently toast or reheat the slice, a significant portion of the starch turns into “resistant starch,” which changes how your body digests it.
