When bananas develop heavy brown spots or dark skin, nearly all of their resistant starch has converted into simple sugars, making them exceptionally sweet and soft.

Crucially, as a banana overripens, its chlorophyll breaks down completely. This process causes antioxidant levels—specifically polyphenols—to peak, giving brown bananas a higher concentration of cell-protecting compounds than green ones.
